Sinfully Delicious Chocolate Eggnog

I had never heard of chocolate eggnog till one day someone posted their version of eggnog with bourbon and chocolate.  As I don't believe in drinking, I had to come up with one that was super delicious but within my religious beliefs too.  So here is what I was drinking all day yesterday.

Ingredients:
  • 4 egg yolks
  • 4 egg whites
  • 3/4 cup sugar
  • 1 cup heavy cream
  • 1 quart milk
  • 1 teaspoon vanilla
  • 2 tsp of ground black seeds
  • 1/4 cup chocolate mix (I used Lion's, but any would do)
Directions:
  1. Place the egg yolks in a bowl along with 1/2 cup of sugar and beat until thick.
  2. If you have bought canned heavy cream, no beating will be necessary, but if you bought fresh cream, you will need to beat until the cream is thick.
  3. Add the egg yolks, egg whites, cream, milk, black seeds and vanilla in one bowl and mix well.  Sprinkle the chocolate mixture over the eggnog and mix well.
  4. Pour into a large pitcher and store in the refrigerator for several hours to chill.
Now here is the trick:
One hour before you are ready to drink this wonderful eggnog, pour the eggnog in big mugs and freeze.  They become very thick and so ooey good you will swear I gave  you the gift of life.  Oh my I have indeed created another masterpiece.

Healthy Green Smoothie with Spinach, Avocado and Banana


This is day two of my raw food fast and part of the instructions is that I need to have some plant fat, olive leaf and fruit juice.  So I thought to myself, why not make a green smoothie and include all of the above.  This smoothie has no sugar or dairy of any kind.  It is very healthy and it tastes great.

Ingredients:
  • 2 cups spinach leaves, frozen may be used
  • 2 frozen bananas
  • 2 tablespoons ground flax seeds
  • 1 1/2 tablespoons dried olive leaf (optional)
  • 1/2 avocado
  • 2 cups ice cold water
Directions:
  1. Put the water, spinach and ground flax in a large blender and blend on high speed for one minute.  Add in the avocado and frozen banana chunks and again blend on high.
  2. This will make enough for two people or one very hungry person.
 
 

Spaghetti Dinner with Winter Vegetables

I made this tonight, well I created it tonight and it was wonderful.  I was looking in my refrigerator for something to cook and I remembered my neighbor, Um Laith.  She use to make spaghetti with many vegetables and it was good.  This is a version of what she did.

Ingredients:
  • 1/2 pound whole wheat spaghetti (substitute the white stuff if you like)
  • 1 tablespoon virgin olive oil (substitute a good oil if you like)
  • 2 green onions, chopped
  • 1/2 cup green beans
  • 1 garlic clove, minced
  • 1 sweet potato, diced
  • 1 cup broccoli, chopped
  • 1 cup cauliflower, chopped
  • 1 cup of shredded carrots
  • 1 small handful of chopped cilantro
  • Salt and pepper for seasoning
  • 1 bouillon cube or 2 cups or chicken stock (vegetable stock may be used)
  • 2 teaspoons soy sauce
  • 2 tablespoons sesame seeds
  • Parmesan cheese (optional)

Directions:
  1. Cook the spaghetti in boiling salted water.  While the spaghetti is cooking, heat the oil in a large skillet.
  2. Add in the onions, garlic and sweet potatoes. Saute' for a few minutes and then add in the cauliflower, carrots, green beans and broccoli.  Stir for a few minutes and then add in the chicken broth.  Add the salt and pepper and bring the broth to a boil.
  3. Cook the vegetables until medium.  I like my veggies crisp and not soggy.
  4. Add the spaghetti to the vegetables and heat thoroughly.  Add in the soy sauce and sesame seeds.
  5. Continue cooking and add in the chopped parsley.  Cook for around 3 to 5 minutes and then put in a large plate.
  6. Top the spaghetti with more seasoning if needed and some parmesan cheese.  
Note:  You can substitute your favorite vegetables in this dish.  If You don't have any sweet potatoes, then use regular potatoes.  Corn would also go very nice in this dish.
